Ingredients
1. 1 2/3 c water 2. 1/4 tsp salt 3. 1 c Basmati rice 4. 1/4 c extra-virgin olive oil 5. 3 Tbsp chopped fresh oregano or 6. 1 Tbsp dried herbs | 7. 2 cloves garlic, crushed 8. 1 1/4 c halved grape tomatoes 9. 1 c chopped cucumber 10. 1/2 c chopped onion 11. 1/4 c pimiento-stuffed olives, sliced 12. 2 Tbsp red wine vinegar | |
Method:
1. Boil water and salt in saucepan. Add rice. Return to boil, reduce heat, cover and let simmer until done, about 15 minutes.
2. Combine oil, oregano, vinegar and garlic in large bowl. Stir in rice, tomatoes, cucumber, onion and olives. Season salad to taste with salt and black pepper.
